New Year’s Day Black Eyed Pea Soup

  • 2 bay leaves
  • 1 ham bone
  • 1 pound cubed cooked smoked ham
  • 1 onion, diced
  • 2-3 celery stalks, diced
  • 1/2 each of green, red, and yellow bell peppers – diced
  • 1 pound dried black eyed peas
  • water

Place ham bone and bay leaves in 6-8 quart stockpot. Add water, leaving an inch or two at the top so your pot doesn’t boil over. Bring to a boil, reduce heat to medium low, and cover. Let simmer for several hours.


Meanwhile, sauté the onions, celery, and peppers in a shallow pan with a tablespoon or so of butter until the onions are translucent (about 2 minutes). Turn off and set aside.


Once ham bone broth has reached your desired flavor, strain through a mesh colander into another pot, reserving liquid.

Return the broth to the stove and bring to a boil. Add the beans, ham, and “holy trinity” (onions, celery, and peppers) and reduce to medium heat.

Cook soup until the beans are soft (about 1 hour). If desired, add some leafy greens of your choice for “prosperity”!

Eat at least 365 beans for good luck as your first meal in the new year:)
